SQUASH NOODLES – Vegan
This is a quick recipe for squash noodles. I combine both green and yellow squash, but it is up to you.
This takes total 10 minutes including prep work to make:
Ingredients for 1 serving:
- Squash (1 squash per person) – spiralized
- 1 tablespoon of peanut butter
- 1/4 cup water
- 1 teaspoon sesame oil or oil of your choice
- Dash of dulse seaweed flakes (optional)
- 1 teaspoon sesame seeds
- Salt to taste
- 1 table spoon nutritional yeast
Method:
- Spiralize the squash of your choice.
- Heat oil in a pan and cook squash for 3 minutes
- Add water, peanut butter and nutritional yeast in a bowl and mix well. Add this mixture to the noodles. Let it cook for 3 minutes until the noodles start to stick together in the sauce
- Add salt, dulse, and sesame seeds. Cook for another 1 minutes
- Remove from heat and serve. ENJOY!
Variation: You can use another nut butter if you are allergic to peanut butter, but taste will be slightly different. Texture will hold though.
Why this is my choice of noodles: I love this recipe because it is full of B vitamins from nutritional yeast and this one serving contains only 220 calories with:
- 11 grams of protein,
- 5 grams of fiber,
- only 6 grams of net carbs,
- over 100% RDA of Vitamin B12, Folate, B1, B2, B3,
- over 800 mg of potassium, which is close to 20% RDA, and
- 33% RDA of manganese.
