Delta Airline Foods Special Meals are not Healthy

I traveled over 36 hours from East coast to Singapore and Delta airlines served me almost zero protein meals for all five meals I received. I had ordered vegetarian meal hoping it would be healthier while traveling….

My first meal was okay – polenta with some lentils and artichoke- there was some form of green on the plate with some lentil proteins

My breakfast was container full of white rice, a giant bagel with strawberry jelly , three spices of zucchini, 3 slices of carrots and few red peppers. What nutritionist or dietician recommends a meal like for someone who had been sitting in airplane for 14 hours? 
My dinner on second flight was essentially the same white rice, mushrooms, cauliflower, corn giant white roll. Dessert was some sugar jelly that was colorless and tasted like sugar water. There was a salad work iceberg lettuce and two leaves of baby chard, few slices of baby cucumbers. Protein was non existent. 
The healthiest thing I received was an apple for snack because I ordered vegetarian meal, rest of the passenger received ice cream and cheese pizza for snack … 
Whatever happened to old fashioned protein like even peanut butter work bagel instead of jam, there are plenty of vegan protein sources like tofu, beans, chickpeas, nuts, even green peas …On another note, i can’t speak for what others were served, but my food lacked healthy in addition to salt, flavor and aroma.
When I finished my one way trip, I called Delta Airlines to give them feedback on what kind of food they had served me and the agent requested I change my Vegan meal request to Vegetarian meal request, which includes eggs and dairy, so I did. 
RESULT: 
Here is my meal coming back to the US. a bit better but no protein again. In the name of protein on this breakfast, there was strawberry yogurt – half cup with 12 grams of added sugar in it. Why not give plain yogurt with 5 packets of sugar – you can always add the sugar.
Everyone else in the plane was served an omelette, why wasn’t I? the meal was supposed to be ovo lacto vegetarian, meaning include eggs and dairy.
Here was my next meal – fettuccini with two pieces of broccoli and giant blob of cream cheese on top.. Jelly dessert again that had zero flavor. No protein once again  – cream cheese was the extent of protein.
Just curious why the vegetarian meal was protein less.. for example – Why wasn’t I served tofu for dinner- I flew through Tokyo to Singapore and tofu is a staple food in all of Asia … The menu card served in the plane had a vegetarian option and it was pasta work mushroom sauce – again no protein. Shouldn’t vegetarians be served balanced diet? In what world does that count as balanced? Why the discrimination? 
This tells me that even for someone like me who eats healthy, not having access to nutritious food can cause to settle to force-feed on 1000s of calories of empty carbs whole sitting around and watching movies for 36 hours…  isn’t this why we have rising obesity and heart diseases?
