Chocolate Coconut Chia Pudding

I love this recipe because it is full of protein, omega-3, and good fat.

Ingredients:

  • Chia Seeds – 1 tbspn
  • Hemp hearts – 1 tbspn
  • raspberries – 2 tbspn
  • unsweetened coconut yogurt or coconut kefir  – 1/2 cup (you can use greek yogurt if you do dairy)
  • stevia to taste
  • Raw cacao nibs – 1 tspn
  • Raw cacao powder – 1 tspn (optional)

Mix everything except raspberries in a bowl and let it sit in the refrigerator for an hour. ENJOY!

MEB’s Choice – My choice is to use home made coconut kefir for this recipe because I love the tang of kefir. Kefir has over 30 strains of good bacteria for our gut. It is more cost efficient and more effective than probiotic pills.

Nutritional Info: This pudding has almost 5 g of fiber, 7 g of protein (more if you use greek yogurt), lot of vitamin K (from Chia) and over 2 g of omega-3 fatty acids. Only 3 grams of net carbs in 250 cal. It will provide 20% of magnesium and 15% manganese you will need for the day.

Other Variations: Sometimes, I use Orgain protein powder (chocolate fudge flavor) in this pudding. I put 1/2 scoop of this protein to boost my protein intake by 10 grams. You can also add nuts to it. Tastes really yummy!
